Growing up in North La with a grandfather who owned a bakery and a pastry chef for a mom, Doyle has sugar and an appreciation for all things pastry running through his veins. It's no surprise that he became a pastry chef and opened his own bakery, Flour Power Confectionery, in 1998.
Growing up in St Bernard with a Sicilian grandfather and a Cajun grandmother, Ronda has food and an appreciation for history and culture running through her veins. It's no surprise she became a history teacher and a pretty good cook as well.
These two Aquarians met and were inseparable. Ronda cooked her grandmother's red gravy, jambalaya and chili for Doyle and he was hooked. Doyle baked Ronda blueberry streusel muffins, chocolate croissants and red velvet cake and her heart melted.
Their love grew, as did their family. Isabella and Paxton came along, with discernible palates and a love for all things food, just like their parents. Ronda cooked for and with them and Doyle taught them how to ice cakes and knead dough. The kids grew and went off to college and there was no one to cook for any more. The onset of empty nest was the catalyst for Cafe Aquarius.
Ronda was on a quest for healthier food and lighter fare, as her belly and Doyle's had grown along with their love and family. She did not find what she was looking for in St Bernard so she decided, with Doyle's blessing, to open a positive, motivating, relaxing cafe space that offered fresh, healthy fare where she would retail Doyle's decadent desserts and put sandwiches on his amazing bread. She joined with long time friend, Chef Michelle Hug, to create a menu full of healthy and not so healthy options. Michelle came from Whole Foods where she opened and managed kitchens across the country. Together, along with the hard work of Kim Newton, they now offer Whole30/Paleo preorder meals, a grab and go case and even a daily Whole30 special to go along with their normal fare.
But something was still missing. The balance was missing. It was not whole. The whole is a sum of all of its parts. They needed to be together again, to be whole. So Doyle left Flour Power behind and joined Ronda at Cafe Aquarius, creating Aquarius cakes and pastries. Balance is restored and crazy good stuff is being created. Come in and check it out!
